Superbowl Sunday is almost here, and whether you're rooting for the Chiefs or the 49ers, there's one thing everyone can agree on – the need for delicious and healthy game day snacks! 🏈 Especially tailored for our vibrant 55+ community, I'm thrilled to share a recipe that's sure to be a hit regardless of which team you're cheering for.

Baked Zucchini Parmesan Chips Recipe

Servings: 4-6

Ingredients:

  • 2 large zucchinis

  • 1/2 cup grated Parmesan cheese

  • 1/4 cup finely ground almond flour

  • 1 tsp garlic powder

  • 1/2 tsp dried oregano

  • 1/2 tsp dried basil

  • Salt and pepper to taste

  • Olive oil spray

Preparation:

  1. Preheat your oven to 375°F (190°C).

  2. Slice the zucchinis into thin, chip-like rounds.

  3. In a mixing bowl, combine Parmesan cheese, almond flour, garlic powder, oregano, basil, salt, and pepper.

  4. Coat each zucchini slice in the mixture on both sides.

  5. Arrange on a baking sheet lined with parchment paper.

  6. Lightly spray with olive oil.

  7. Bake for 20-25 minutes until golden and crispy.
