Exciting news for your Taco Tuesday! This week, we're putting a healthy spin on a classic favorite: Chicken and Black Bean Tacos. Packed with flavor and nutritious ingredients, this recipe is sure to become a new staple in your meal rotation.

Chicken and Black Bean Tacos Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts, thinly sliced

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 large bell pepper, sliced

  • 1 medium onion, sliced

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp paprika

  • 1/2 tsp chili powder

  • Salt and pepper to taste

  • Whole grain or low-carb tortillas

  • Fresh lettuce, shredded

  • 1 tomato, diced

  • 1 avocado, sliced

  • Fresh cilantro, chopped (for garnish)

  • Lime wedges (for serving)

  • Optional: Greek yogurt or low-fat sour cream for topping

Instructions:

  1. Cook the chicken in a large skillet until browned and cooked through. Set aside.

  2. In the same skillet, add a bit of oil, then cook the bell pepper and onion until soft. Stir in garlic, cumin, paprika, chili powder, salt, and pepper, and cook for 2 more minutes.

  3. Add black beans to the skillet to heat through.

  4. Warm the tortillas separately.

  5. Assemble the tacos with chicken, black bean mixture, lettuce, tomato, avocado, and cilantro.

  6. Serve with lime wedges and an optional dollop of Greek yogurt or low-fat sour cream.
