Filling:
4 medium-sized apples, peeled and sliced (Fuji or Granny Smith recommended)
1 tsp cinnamon
1/4 cup water
1 tbsp lemon juice
Sweetener equivalent to 1/4 cup of sugar (like stevia or erythritol)
Topping:
3/4 cup rolled oats (gluten-free if needed)
1/4 cup almond flour
1/4 cup chopped nuts (walnuts or almonds)
1/2 tsp cinnamon
1/4 tsp salt
2 tbsp melted butter or coconut oil
Sweetener equivalent to 2 tbsp of sugar
Instructions:
Preheat Oven: Set your oven to 350°F (175°C).
Prepare Filling: Mix sliced apples with cinnamon, water, lemon juice, and sweetener. Place in a baking dish.
Make the Topping: In a separate bowl, combine oats, almond flour, nuts, cinnamon, salt, melted butter/coconut oil, and sweetener. Sprinkle over apples.
Bake: Bake in the preheated oven for about 30 minutes, or until the topping is golden and apples are tender.
Serve Warm: Enjoy slightly cooled, with a scoop of low-carb ice cream or whipped cream for extra delight!
👩🍳 Chef's Tip: Adjust the sweetness to your taste and dietary needs. Remember, portion control is key in managing diabetes effectively.
This delightful dessert proves that managing a health-conscious diet can still be delicious and satisfying, especially during the winter season. So, grab your apron, and let's make baking a warm and joyful experience!
Stay warm, happy baking, and remember: moderation is key. It's always best to consult with your healthcare provider about your diet.
Warm wishes,
